Calling all Chefs!

I need your advice! I want to make dinner with the following ingredients:
  • Rotisserie Chicken (we only like the white meat)
  • Sliced Portobella Mushrooms
  • Fresh Spinach
  • Whole wheat spaghetti
  • Grape tomatoes
As you can see, I'm trying to make it a "light" meal-- I don't want a super-fatty dish. Bikini time is in 2 months! So-- what would YOU do?  Inspiration is badly needed here!

You should make a olive oil/lemon sauce with it and have a nice pasta dish. I make it a lot with shrimp so just put some chicken in there instead. While cooking the pasta, coat the bottom of a pan with extra virgin olive oil, then add some garlic. When that is cooked, add the mushrooms, chicken and lemon juice. When the pasta is done, add it to the sauce then throw in the spinach so it can wilt and toss in the cherry tomatoes (I usually cut them in half) at the last minute (they are like a nice little burst of freshness when you bite into one). It is delish!
